Brewed from organic rice in a very limited quantity. Tasting this sake will surprise you: it brings together the round character of most Kyoto sakes with a dry and clean finish, full of umami. It gives out flavors of ripe fruit and rice, yet is not sugary. A wonderfully structured sake, far beyond the (under-)promise on its label. Brewed with the Iwai rice strain, notoriously moody to grow and hard to brew.

One of my nicest discoveries in the past few years. Its label is quiet and unassuming, it's that of a « futsūshu ». Behind it you will find a fine sake, delicately fragrant, which in fact could be labeled and sold as a « ginjō ». Don't let appearances fool you into thinking it is a simple brew: this is a splendid sake, sporting subtle notes of apple and rice. A delicate sake, with just enough dryness.

Built on the ample and generous kimoto starter mash, this sake offers a magnificent structure. It is wonderfully devoid of the slight bitterness sometimes found in sakes from this category. About Finest Sake

Japanese Sake. One of the most easily misunderstood beverages. A beverage rooted in the Japanese identity, anchored in its soul and traditions. A beverage made with its most pervasive grain: rice.

Matthieu Zellweger is a Master Sake Sommelier (MSS) certified by the Sake Sommelier Association (SSA); he is also certified as a Sake Professional by the Sake Education Council (SEC) and as an SSA Sake Instructor. He has been around Japan and its iconic drink for nearly three decades and is still uncovering their secrets.
